Chilli peppers are part of the milpa system that give taste and identity throughout the preparation of food to the traditional and no traditional societies of Mexico up to date. Despite its cultural and economic importance, chilli peppers have been neglected by science. This contribution documents the complexity of the relationship of a versatile plant with dynamic cultures using as a excuse the preparation of food within ritual related festivities. This works tries to prove that in order to conserve chilli peppers we need to conserve the culture that goes with it.
